Traditional cider making is an art form older than our country itself. It finds its new terroir in our pocket of Canada, with an authentic New World twist.

Owner operated, we’re based in the heart of Nova Scotia on Canada’s east coast. Bulwark Cider’s five-apple signature blend is made with apples from the Annapolis Valley. In the early 1600s, the first European settlers to Nova Scotia quickly identified the valley’s terroir, with its fertile soil and unique microclimate, as the perfect place to grow apples.

400 years on, we still nurture this gift and continue to benefit from the land. Cider, in a way, is very simple to make. Juiced apples are combined with yeast and fermentation occurs. Yet, it’s also highly complex. Just like wine, you need quality fruits and sound wine-making skills to get great results. Our cider is made from freshly pressed apples, juiced on site.

Our signature blend is made from North American apple varieties, including Golden Russet, Macintosh, Honey Crisp, Cortland and Northern Spy. We look for a synergy of acid, tannins and sweetness to create a balanced blend that best reflects our terroir. The juice is slowly fermented one batch at a time, and adjustments are made batch by batch so that we have a premium signature blend every time.

Our cider reflects our values: natural ingredients, exceptional taste and outstanding craftsmanship. For both loyal locals and connoisseurs world wide, our cider is packaged in kegs and bottles. We can bottle up to 3,000 bottles and hour. Homegrown in Nova Scotia, it’s where our cider comes from. Bulwark, authentic craft cider with a New World twist.
